  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 oz cream cheese, cubed (8 ounces)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your slow cooker.
  2. In a separate bowl, whisk together the chicken broth, cream cheese cubes, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper until mostly combined.
Cooking
  1. Pour the sauce mixture evenly over the chicken in the slow cooker.
  2. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  3. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  4. Stir the cornstarch slurry into the sauce in the slow cooker and mix well.
  5. Cook on HIGH for 10 to 15 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
Serving
  1. Serve the creamy Parmesan slow cooker chicken immediately over pasta, rice, or mashed potatoes.

Notes

Got leftovers? Store in an airtight container for up to 4 days in the fridge or freeze for up to 3 months. Reheat gently on the stove or in the microwave, adding a splash of chicken broth if needed.
