Pasta and Chicken
  • 8 ounces pasta Gluten-free pasta can be substituted
  • 1 pound chicken breast Plant-based chicken can be used for a vegan option
Sauce Ingredients
  • 4 tablespoons butter Use non-dairy butter for a vegan option
  • 3 cloves garlic Minced
  • 1 medium onion Yellow or white
  • 1 cup heavy cream Coconut milk works as a great dairy-free alternative
  • 1 cup chicken broth Vegetable broth for vegetarian option
  • 1/2 cup Parmesan cheese Nutritional yeast can be used for a vegan option
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon red pepper flakes Adjust to taste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh parsley For garnish

Method
 

Preparation
  1. Boil the pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pan, melt the butter over medium heat.
  3. Add the onion and garlic, sauté for 2-3 minutes until fragrant.
  4. Toss in the chicken pieces, cooking until they turn golden brown.
  5. Pour in the heavy cream, chicken broth, and season with Italian seasoning, red pepper flakes, salt, and pepper.
  6. Stir in the Parmesan cheese until melted and creamy.
  7. Fold in the cooked pasta, combining well to coat in that delicious sauce.
  8. Garnish with fresh parsley and serve hot.

Notes

For extra flavor, add a splash of lemon juice before serving. This pasta will keep well in the fridge for up to 3–4 days. Can be frozen for up to 2 months.
