  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup broccoli florets Fresh or frozen (thawed and drained) works.
  • 1 cup cooked rice Use leftover rice if available.
  • 1 can cream of mushroom soup Can substitute with cream of chicken soup if desired.
  • 1 cup shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, broccoli, cooked rice, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper and mix until well combined.
  3. Transfer the mixture to a greased casserole dish and spread evenly.
  4. Sprinkle the shredded cheddar cheese on top.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes or until heated through and the cheese is bubbly.
  2. Serve warm.

Notes

This casserole keeps well in the fridge for about 3-4 days. For longer storage, freeze it for 2-3 months. Reheat in the oven for best results.
