- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook until golden brown on both sides (about 5-7 minutes per side), then remove and set aside.
- In the same skillet, add the chopped onion and garlic; sauté until fragrant.
- Stir in the rice and cook for an additional 2-3 minutes.
- Add the chicken broth and cream, bringing it to a simmer.
- Return the chicken to the skillet, cover, and reduce heat to low.
- Cook until the rice is tender and has absorbed most of the liquid (about 20-25 minutes).
- Garnish with parsley before serving.
Notes
For variations, mix up the rice with brown rice or quinoa for a healthier option. Add veggies such as spinach or peas for added nutrition and color. Leftovers can be transformed into a creamy soup by adding more broth when reheating.
