  • 1 pound chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

  • 2 tablespoons olive oil
  • Parmesan cheese, for garnishing

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned, about 5-7 minutes. Season with salt, pepper, garlic powder, and Italian seasoning.
  3. Stir in broccoli and cherry tomatoes, cooking for another 3-5 minutes until tender.
  4. Pour in heavy cream and bring to a simmer. Let it cook for an additional 5 minutes until the sauce thickens.
  5. Serve hot, garnished with a sprinkle of Parmesan cheese.

Notes

For extra flavor, marinate the chicken in the seasoning for 30 minutes prior. You can use rotisserie chicken to save time. For a bit of crunch, toss in toasted almonds. You can also swap broccoli for spinach or asparagus if preferred.
