Preparation
  1. Season the chicken breasts with Cajun seasoning.
  2. In a skillet, heat olive oil over medium heat and cook the chicken until fully cooked, about 6-7 minutes per side.
  3. Remove chicken from the skillet and let it rest before slicing.
Making the Sauce
  1. In the same skillet, add heavy cream and Parmesan cheese, stirring until combined.
Assembly
  1. Serve sliced chicken over cooked rice and drizzle with the creamy sauce.
  2. Garnish with green onions if desired.
