  • 4 pieces chicken breasts
  • 8 ounces brie cheese
  • 1/2 cup cranberry sauce
  • 2 tablespoons olive oil
  • to taste Salt and pepper
Garnish (optional)
  • to taste Fresh thyme or parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice a pocket into each chicken breast.
  3. Stuff each pocket with a slice of brie cheese and a spoonful of cranberry sauce.
  4. Season the outside of the chicken breasts with salt and pepper.
Cooking
  1. Heat olive oil in a skillet over medium-high heat, and sear the chicken breasts for 2-3 minutes per side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is fully cooked.
Serving
  1. Garnish with fresh thyme or parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven for best results.
