  • 2 lb bacon Cooked until crispy and chopped into pieces
  • 1 (30-32 oz) bag frozen tater tots
  • 1 (1 oz) package ranch dressing mix
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups milk

Preparation
  1. Preheat your oven to 350ºF degrees.
  2. Lightly spray a 9x13-inch baking dish with cooking spray.
  3. Cook the bacon in a large skillet until crispy and chop it into pieces.
  4. In a large bowl, toss together the tater tots, cooked bacon, and cheeses until everything is coated.
  5. Pour the mixture into the prepared baking dish.
  6. In another bowl, whisk together the eggs, ranch mix, and milk until smooth.
  7. Pour the egg mixture evenly over the tater tot mixture.
  8. If baking later, cover and refrigerate (it can chill overnight).
Baking
  1. Bake for 50-60 minutes or until the eggs are set and everything is golden on top.

Notes

Let it rest after baking for a few minutes for easier serving. Serve with green onions or parsley for color, and pair with fruit salad or salsa.
