Ingredients

Tortellini
  • 20 oz cheese tortellini Fresh or refrigerated varieties yield the best texture and taste.
Steak
  • 1 lb steak (sirloin or ribeye) Sirloin is leaner; ribeye is more tender.
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
Sauce Base
  • 2 tbsp olive oil Essential for searing the steak.
  • 4 tbsp butter Creates a creamy sauce base.
  • 5 cloves garlic, minced Adds aromatic richness.
  • 1 cup heavy cream Contributes a velvety smoothness.
  • 3/4 cup whole milk Balances the richness.
  • 1 1/4 cups parmesan, shredded or freshly grated Brings a savory flavor.
Garnishes
  • Parsley, chopped (optional) Brightens the dish.
  • Red pepper flakes (optional) For a spicy kick.
  • Cracked black pepper (optional garnish) Elevates the flavor.

Method

Preparation
  1. Cook the tortellini according to package instructions, then drain and set aside.
  2. Season the steak with salt, pepper, garlic powder, and smoked paprika, ensuring it’s evenly coated.
Cooking
  1. In a large pan, heat olive oil over medium-high heat, then add the steak.
  2. Sear the steak for about 4-5 minutes on each side until it reaches your desired doneness. Remove and let rest.
  3. Melt the butter in the same pan, allowing it to brown slightly, then add minced garlic and sauté for about 1 minute.
  4. Pour in the heavy cream and milk, stirring continuously to combine and bring to a gentle simmer.
  5. Add the parmesan cheese while stirring – let it melt into the sauce.
  6. Return the cooked tortellini to the pan, tossing to coat in the creamy sauce.
Serving
  1. Slice the steak against the grain and serve atop the tortellini, garnishing with parsley and red pepper flakes if using.

Notes

For an extra punch of flavor, consider marinating the steak in your favorite spices for a couple of hours before cooking. If you’re in a pinch, swap the steak for cooked chicken or shrimp. Don’t rush the sauce-making process — let it simmer gently for that creamy perfection!
