  • 1/2 cup bell peppers, diced Any color will work.
  • 1/4 cup red onion, diced For added flavor.
  • 1/4 cup olives, sliced Black or green, your choice.
  • 1 teaspoon Italian seasoning For an herby flavor.
  • to taste Salt and pepper Adjust according to preference.
  • Fresh basil for garnish Add just before serving.

Preparation
  1. In a bowl, combine the cottage cheese and mozzarella cheese.
  2. Add in the cherry tomatoes, bell peppers, red onion, and olives.
  3. Season with Italian seasoning, salt, and pepper.
  4. Mix everything well until combined.
  5. Serve in individual bowls and garnish with fresh basil.

Notes

This dish can keep well in the fridge for about 3-4 days. For meal prep, you can easily make it a day in advance. Reheat in the microwave for a cozy meal.
