  • 1 lb chicken breast or chicken thighs, cubed
  • 1 cup cottage cheese
  • cup grated Parmesan cheese
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon oil

Method
 

Preparation
  1. Season the cubed chicken with salt, paprika, and black pepper until evenly coated.
  2. Pat the chicken dry before seasoning to help it brown properly in the skillet.
Cooking
  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Add the chicken in a single layer and cook without moving until golden on the bottom.
  3. Flip the chicken pieces and cook until fully cooked and lightly golden on all sides.
  4. Reduce the heat to low before adding the sauce ingredients.
  5. Add the cottage cheese to the skillet and stir gently as it warms and softens.
  6. Sprinkle in the Parmesan cheese and stir until the sauce coats the chicken evenly.
  7. Taste and adjust salt or pepper as needed.
  8. Let the chicken simmer gently for 2 to 3 minutes until the sauce thickens slightly.
  9. Remove from heat and let rest for one minute before serving.

Notes

Serve this chicken over rice or mashed potatoes, and top with parsley for garnish. Keeps in the fridge for 3-4 days. Can be frozen for up to three months.
