Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Add cottage cheese and egg to a blender or food processor. Blend for 30-60 seconds until completely smooth; no curds should remain.
- Pour the smooth mixture onto the prepared baking sheet. Spread it into a circle about 8-10 inches wide and ¼ inch thick using a spatula.
- Bake for 12-15 minutes until the edges are golden brown and the center feels set upon a light touch.
- Let cool for 2-3 minutes before adding toppings or slicing to prevent toppings from sliding off.
Notes
Mix it up with garlic powder or spices for a twist! You can also make it vegan by substituting the egg with flaxseed meal mixed with water.
