  • 1 lb chicken breasts, diced
  • 1 cup cottage cheese
  • 1.5 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • to taste Salt and pepper
  • Fresh basil (for garnish)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chicken breast to the skillet. Season with salt, pepper, and dried oregano. Cook until the chicken is browned and cooked through (about 5-7 minutes).
  4. Stir in the marinara sauce and bring to a simmer. Let it bubble for a couple of minutes.
  5. Turn off the heat and mix in the cottage cheese until well combined.
  6. Top with shredded mozzarella and sprinkle with grated Parmesan.
  7. Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container for 3-4 days. You can freeze it for up to 2 months. To make it vegan, substitute chicken with diced mushrooms or chickpeas and use plant-based cheese options.
