Preparation
- Preheat your oven to 375°F (190°C). Lightly spray an 8×8-inch baking dish with olive oil.
- Combine cottage cheese, Parmesan, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper in a blender. Blend for 30-45 seconds, scraping down the sides as needed until completely smooth and creamy.
- Place chicken breasts in the prepared baking dish. Pour the blended sauce evenly over the chicken, making sure each piece is fully coated.
Cooking
- Bake uncovered for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce bubbles with light golden spots on top.
- Allow the dish to rest for 5 minutes before serving to let those juices redistribute. Garnish with fresh parsley or chives if desired.
Notes
Leftovers will keep in the fridge for about 3-4 days. To reheat, use the oven or microwave. For variations, consider adding spinach, broccoli, or jalapeños.
