  • 4 pieces boneless, skinless chicken breasts similar size for even cooking
  • 1 cup cottage cheese full-fat or low-fat
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray for greasing the dish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly spray an 8×8-inch baking dish with olive oil.
  2. Combine cottage cheese, Parmesan, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper in a blender. Blend for 30-45 seconds, scraping down the sides as needed until completely smooth and creamy.
  3. Place chicken breasts in the prepared baking dish. Pour the blended sauce evenly over the chicken, making sure each piece is fully coated.
Cooking
  1. Bake uncovered for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce bubbles with light golden spots on top.
  2. Allow the dish to rest for 5 minutes before serving to let those juices redistribute. Garnish with fresh parsley or chives if desired.

Notes

Leftovers will keep in the fridge for about 3-4 days. To reheat, use the oven or microwave. For variations, consider adding spinach, broccoli, or jalapeños.
