  • 1 cup cottage cheese Smoothened for best results
  • 3 large eggs Separate whites and yolks
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 cup blueberries Fresh or frozen
  • to taste sweetener (e.g., stevia or erythritol)
  • a pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, blend the cottage cheese until smooth.
  3. Separate the egg whites from the yolks. Mix the egg yolks into the cottage cheese mixture along with almond flour, baking powder, sweetener, and a pinch of salt.
  4. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the cottage cheese mixture.
  5. Carefully fold in the blueberries.
  6. Spoon the mixture onto the prepared baking sheet to form cloud shapes.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow to cool slightly before serving.

Notes

For added sweetness, drizzle with honey or serve with Greek yogurt. Store leftovers in the fridge for up to 3 days or freeze for 2 months.
