Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, blend the cottage cheese until smooth.
- Separate the egg whites from the yolks. Mix the egg yolks into the cottage cheese mixture along with almond flour, baking powder, sweetener, and a pinch of salt.
- In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the cottage cheese mixture.
- Carefully fold in the blueberries.
- Spoon the mixture onto the prepared baking sheet to form cloud shapes.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For added sweetness, drizzle with honey or serve with Greek yogurt. Store leftovers in the fridge for up to 3 days or freeze for 2 months.
