Ingredients
  

Base Ingredients
  • 1 cup cream cheese, softened Ensure it’s softened for a smooth texture.
  • 1 cup sour cream
  • 2 cups corn (canned or frozen)
  • 1 cup shredded cheddar cheese Feel free to add more cheese for extra flavor.
Vegetables
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions Can garnish with extra green onions if desired.
  • 1-2 pieces jalapeños, diced (optional) Adjust spice level to taste.
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine cream cheese and sour cream until smooth.
  2. Add corn, cheddar cheese, diced red bell pepper, chopped green onions, and optional jalapeños and mix well.
  3. Sprinkle in garlic powder, onion powder, along with salt and pepper, and stir until everything is well combined.
  4. Transfer the dip to a serving dish and chill in the fridge for at least 30 minutes.
Serving
  1. Serve with tortilla chips, crackers, or fresh veggies.

Notes

For a variation, you could swap red bell pepper with diced tomatoes or black beans. To warm it up, heat in a skillet for a gooey version.
