  • 1 cup unsalted butter Room temperature
  • 1 cup granulated sugar For dough
  • 2 large eggs Room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Can be substituted for gluten-free flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon For dough
For Rolling
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon For rolling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and 1 cup of sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla until it’s all well-mixed.
  4. In another bowl, combine flour, baking powder, salt, and 1 tablespoon of cinnamon. Gradually add this to your butter mixture until everything is nicely blended.
  5. Roll the dough into balls, then roll each ball in a mixture of 1/2 cup of sugar and 1 teaspoon of cinnamon.
Baking
  1. Place the dough balls on the prepared baking sheet and bake for 10-12 minutes or until the edges turn lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to 5 days. Freeze for up to 3 months and reheat in the oven before serving. For best results, let ingredients reach room temperature before mixing.
