  • 1 cup gluten-free all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the Tiramisu Layer
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/2 cup brewed espresso, cooled
  • 1/4 cup powdered sugar

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a mixing bowl, combine gluten-free flour, cocoa powder, granulated sugar, and salt. Whisk until well blended.
  3. In another bowl, whisk together melted butter, eggs, and vanilla extract until fully combined.
  4. Gradually fold the wet mixture into the dry ingredients, mixing until just blended.
  5. Pour the brownie batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean or with a few moist crumbs.
  7. While the brownies cool, make the tiramisu layer by combining mascarpone, heavy cream, cooled espresso, and powdered sugar in a bowl. Blend until smooth.
  8. Once the brownies have cooled, spread the tiramisu mixture over the brownies.
  9. Dust the top with unsweetened cocoa powder just before serving.
  10. Slice into squares and enjoy your decadent dessert!

Notes

For a quicker prep, use store-bought gluten-free brownie mix. Add chocolate chips or nuts for extra fudginess. You can substitute eggs with flax eggs for a vegan option, and use coconut oil for butter.
