Preparation
- In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract until well mixed.
- Scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet to form clusters, aiming for about 10 clusters.
Freezing
- Freeze the baking sheet with the yogurt clusters until completely solid, about 1-2 hours.
Chocolate Coating
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring in between, until melted.
- Remove the frozen yogurt clusters from the freezer and dunk each one into the melted chocolate using a spoon for an even coat.
- Place the coated clusters back on the prepared baking sheet and optionally sprinkle a bit of sea salt on top.
- Freeze for a few more minutes to harden the chocolate, then enjoy!
Notes
Store clusters in the freezer for up to a month in an airtight container. Allow to sit for a minute before enjoying.
