Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- Mix cocoa powder, sugar, melted butter, eggs, and vanilla extract in a bowl until well combined.
- Stir in flour and salt until just combined. Avoid overmixing.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 20-25 minutes, then cool completely in the pan.
Mousse Preparation
- In another bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Fold in the semi-sweet chocolate chips, then spread the mousse layer over the cooled brownies.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
Serve straight from the fridge; optionally, garnish with powdered sugar or fresh berries for a pop of color. For storage, keep in the fridge for 3-4 days or freeze for up to 2 months. To thaw, place in the fridge or slightly warm in the microwave before serving.
