  • 1 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 4 large eggs Use room-temperature eggs for better emulsification.
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
Mousse Ingredients
  • 1 cup heavy cream Chilled
  • 1/4 cup powdered sugar
  • 1 cup semi-sweet chocolate chips Fold into whipped cream

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. Mix cocoa powder, sugar, melted butter, eggs, and vanilla extract in a bowl until well combined.
  3. Stir in flour and salt until just combined. Avoid overmixing.
  4. Pour the batter into the prepared pan and spread it evenly.
  5. Bake for 20-25 minutes, then cool completely in the pan.
Mousse Preparation
  1. In another bowl, whip the heavy cream and powdered sugar until soft peaks form.
  2. Fold in the semi-sweet chocolate chips, then spread the mousse layer over the cooled brownies.
  3. Chill in the refrigerator for at least 2 hours before serving.

Notes

Serve straight from the fridge; optionally, garnish with powdered sugar or fresh berries for a pop of color. For storage, keep in the fridge for 3-4 days or freeze for up to 2 months. To thaw, place in the fridge or slightly warm in the microwave before serving.
