Ingredients
  

For the Chicken
  • 4 pieces chicken thighs Use skin-on, bone-in thighs for extra moisture and flavor.
  • 1/4 cup honey
  • 2 tablespoons chipotle sauce
  • 2 tablespoons olive oil
  • to taste salt and pepper
For the Mashed Potatoes
  • 2 cups potatoes, peeled and diced Russet or Yukon Gold potatoes work best.
  • 1/2 cup smoked gouda cheese, shredded Feel free to add cayenne pepper for extra heat.
  • 1/2 cup milk Add a splash when reheating to restore creaminess.
  • 2 tablespoons butter

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix honey, chipotle sauce, olive oil, salt, and pepper. Marinate the chicken thighs in this mixture for at least 30 minutes.
Cooking
  1. Place the marinated chicken on a baking sheet and bake for 25-30 minutes or until the chicken is cooked through.
  2. Meanwhile, boil the diced potatoes in salted water until tender. Drain and return them to the pot.
  3. Add smoked gouda, milk, and butter to the potatoes. Mash until creamy. Season with salt and pepper to taste.
Serving
  1. Serve the baked chicken thighs on a plate with smoked gouda mashed potatoes on the side. Garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven or microwave.
