Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix honey, chipotle sauce, olive oil, salt, and pepper. Marinate the chicken thighs in this mixture for at least 30 minutes.
Cooking
- Place the marinated chicken on a baking sheet and bake for 25-30 minutes or until the chicken is cooked through.
- Meanwhile, boil the diced potatoes in salted water until tender. Drain and return them to the pot.
- Add smoked gouda, milk, and butter to the potatoes. Mash until creamy. Season with salt and pepper to taste.
Serving
- Serve the baked chicken thighs on a plate with smoked gouda mashed potatoes on the side. Garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven or microwave.
