Chili Con Carne

Ingredients
  

For the base
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 500 g ground beef
For the chili
  • 3 tbsp tomato paste
  • 800 g crushed tomatoes
  • 420 g red kidney beans, drained
  • 2 cubes beef bouillon, crumbled
  • 1.5 tsp sugar
  • 0.5 to 1.5 cups water (as needed)
  • Salt and black pepper, to taste
  • 1-2 tsp cayenne pepper (adjust to taste)
  • 4 tsp paprika
  • 5 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano

Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat. Add garlic and onion, cooking for 1 minute before adding the red bell pepper. Cook for 2 more minutes until everything is soft and fragrant.
  2. Add the ground beef to the pot. Break it apart with a spoon and cook until it is fully browned and slightly crisp.
  3. Add the full spice mix—cayenne, paprika, cumin, garlic powder, onion powder, and oregano. Stir continuously for 1-2 minutes until deeply aromatic.
  4. Stir in the tomato paste, followed by the crushed tomatoes, kidney beans, bouillon, sugar, and ½ cup of water. Bring to a simmer and cook for at least 20-40 minutes, adding more water if it gets too thick.
  5. Season with salt and pepper to taste. Serve hot with rice, chips, or tortillas and your favorite toppings like sour cream and cheese.

Notes

Prep ahead by chopping your veggies beforehand to save time. For added flavor, consider adding a splash of beer or a dash of hot sauce during simmering. Try different beans or add extra veggies like corn for variety. A square of dark chocolate can elevate the flavors without making it taste chocolatey.
