  • 1/4 cup sun-dried tomatoes, chopped Adds extra flavor.

  1. Drain and rinse the canned chickpeas.
  2. In a skillet over medium heat, add the chickpeas and cook until warmed through.
  3. Create a small well in the chickpeas and crack the eggs into the well.
  4. Cook until the eggs are set to your liking.
  5. Sprinkle with chopped sun-dried tomatoes, salt, and pepper before serving.

Notes

For a twist, consider using silken tofu in place of eggs for a vegan version. Experiment with spices like cumin or paprika for added flavor.
