  • 1 piece chicken breast, cooked and diced Ensure chicken is fully cooked.
  • 1 piece sweet potato, peeled and diced Dice evenly for even cooking.
  • 1 cup broccoli florets Fresh broccoli is recommended.
  • 2 tablespoons olive oil For roasting the vegetables.
  • to taste Salt and pepper Use according to personal preference.
Optional toppings
  • 1 piece avocado Sliced, for a creamy topping.
  • 2 tablespoons sesame seeds For added crunch.
  • to taste sauce Any preferred sauce can be added.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potato and broccoli florets with olive oil, salt, and pepper.
Roasting
  1. Spread sweet potato and broccoli on a baking sheet and roast for about 20-25 minutes, or until tender.
Mixing
  1. In a bowl, combine the cooked rice, roasted sweet potato, broccoli, and diced chicken.
  2. Mix well and top with optional toppings if desired.

Notes
