  • 2 cups sweet corn (grilled or canned) If using canned corn, drain and rinse.
  • 1 cup cherry tomatoes, halved
  • 1 each avocado, diced Use ripe avocados for best flavor.
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro, chopped
Dressing Ingredients
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • to taste salt and pepper

Preparation
  1. In a large mixing bowl, combine the cooked shredded chicken, sweet corn, cherry tomatoes, diced avocado, chopped red onion, and cilantro.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  3. Pour the dressing over the chicken and vegetable mixture in the large bowl.
  4. Gently toss all the ingredients together until well-coated in the dressing.
  5. Serve immediately or cover and refrigerate for later.
