  • 8 ounces penne pasta (or pasta of your choice)
  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced (Italian or your favorite flavor)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper chopped (red, green, or yellow)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil, for garnish (optional)

Method
 

Cooking Instructions
  1. Boil your pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil and toss in chicken sausage. Sauté until browned.
  3. Add the onion, garlic, bell pepper, and cherry tomatoes. Cook until everything's fragrant and softened.
  4. Stir in the cooked pasta and spinach. Sprinkle with Italian seasoning, salt, and pepper. Mix well.
  5. Top with Parmesan cheese and basil before serving, if desired.

Notes

For best results, prep all ingredients before starting. Experiment with spicy sausage or add nuts for crunch. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 3 months.
