  • 1 cup orzo pasta Use gluten-free orzo if needed.
  • 2 links chicken sausage, sliced Can substitute with turkey or veggie sausage.
  • 2 cups broccoli florets Add spinach or peas for more greens.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Method
 

Preparation
  1. Cook orzo pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced chicken sausage and cook until browned.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add broccoli florets and cook until tender, about 4-5 minutes.
  6. Combine cooked orzo with the sausage and broccoli mixture, and season with salt and pepper.
  7. Serve warm, topped with Parmesan cheese if desired.

Notes

Leftovers can be refrigerated for up to 3 days or frozen for about a month. To reheat, microwave or sauté with a splash of olive oil.
