Ingredients
  

For the Chicken Salad
  • 1 cup cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup celery, finely chopped
  • 1/4 cup red grapes, halved
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste Optional: can add diced bell peppers or diced apples.
For the Pastry
  • 1 package puff pastry sheets Thaw overnight in fridge for best results.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine cooked chicken, mayonnaise, celery, grapes, Dijon mustard, salt, and pepper. Mix well.
  3. Roll out puff pastry sheets and cut into small squares.
  4. Place a spoonful of the chicken salad mixture in the center of each square.
  5. Fold the pastry over and seal the edges.
Baking
  1. Place on a baking sheet and bake for 15-20 minutes or until golden brown.
Serving
  1. Serve warm or at room temperature.

Notes

These are great for appetizers at parties or brunch. Pair with a light salad or veggies, and a dipping sauce like ranch or vinaigrette is recommended. For storage, keep in an airtight container in the fridge and reheat in the oven for a few minutes to regain crispness.
