  • 2 pieces chicken breasts Skinless and boneless
  • 2 cups fresh tomatoes, diced Can substitute canned tomatoes if fresh are not available
  • 3 cloves garlic, minced Fresh garlic gives the best flavor
  • 1/4 cup fresh basil, chopped Add more for garnish if desired
  • 1/4 cup grated Parmesan cheese Can substitute with mozzarella for a different flavor
  • 2 tablespoons olive oil Use extra virgin for better flavor
  • to taste Salt and pepper Adjust to your preference

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-6 minutes on each side until golden and cooked through.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds.
  5. Add diced tomatoes and cook for about 5 minutes, until soft.
  6. Stir in fresh basil and Parmesan cheese.
  7. Return chicken to the skillet, spooning the sauce over the top.
  8. Cook for an additional 2-3 minutes to heat through.
  9. Serve hot.

Notes

Serve with crispy garlic bread and fresh greens for a perfect meal. Best enjoyed fresh but can be stored in the fridge for 3-4 days or frozen for up to a month.
