Cooking
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-6 minutes on each side until golden and cooked through.
- Remove chicken from skillet and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Add diced tomatoes and cook for about 5 minutes, until soft.
- Stir in fresh basil and Parmesan cheese.
- Return chicken to the skillet, spooning the sauce over the top.
- Cook for an additional 2-3 minutes to heat through.
- Serve hot.
Notes
Serve with crispy garlic bread and fresh greens for a perfect meal. Best enjoyed fresh but can be stored in the fridge for 3-4 days or frozen for up to a month.
