Ingredients
  

Chicken and Coating
  • 4 pieces boneless, skinless chicken breasts Pound to even thickness for tenderness.
  • 1 cup gluten-free breadcrumbs Can substitute with regular breadcrumbs.
  • 1 cup grated Parmesan cheese
  • 2 pieces eggs Beaten for breading.
Sauce and Topping
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
For frying
  • Olive oil as needed for frying
  • Fresh basil for garnish optional

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, beat the eggs.
  4. In another bowl, mix the gluten-free breadcrumbs and Parmesan cheese.
  5. Dip each chicken breast in the egg, then coat it in the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  2. Place the fried chicken in a baking dish, then top with marinara sauce and mozzarella cheese.
  3. Bake for 20-25 minutes until the chicken is cooked through and the cheese is bubbly.
  4. Garnish with fresh basil and serve.

Notes

For crispy results, ensure chicken is fried to golden brown. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
