  • 1 package (16 oz) gnocchi Cook according to package instructions.
  • 2 cups mixed vegetables (carrots, celery, spinach) Feel free to swap with other veggies as desired.
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced Sauté until fragrant.
  • 4 cups chicken broth
  • 1 cup heavy cream Can be substituted with coconut milk for a vegan option.
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Method
 

Cooking
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Toss in the shredded chicken and mixed vegetables; cook for a few minutes until they start to soften.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the gnocchi and cook according to the package instructions, stirring occasionally.
  6. Once the gnocchi is cooked, stir in the heavy cream and dried thyme.
  7. Season with salt and pepper to taste.

Notes

Store in an airtight container in the fridge for 3-4 days. Freeze for up to 3 months. Reheat on the stove and add broth if soup thickens.
