Main Ingredients
  • 2 cups cooked rice Use white or brown rice.
  • 1 pound cooked chicken, shredded Leftover rotisserie chicken works great.
  • 1 cup mixed fresh vegetables (like bell peppers, carrots, and cucumbers)
Peanut Dressing
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup Either works for sweetness.
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
Seasoning and Garnish
  • to taste salt and pepper
  • chopped peanuts and cilantro for garnish

Method
 

Preparation
  1. In a large bowl, combine the cooked rice, shredded chicken, and mixed vegetables.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and sesame oil until smooth.
  3. Pour the peanut dressing over the rice and chicken mixture, tossing to combine.
  4. Season with salt and pepper to taste.
  5. Serve garnished with chopped peanuts and cilantro.

Notes

For extra flavor, whisk the dressing well until smooth. Can be made a day ahead, just add the dressing on serving day. Leftovers can be reheated in the microwave but shouldn't be overcooked.
