- In a large bowl, combine the cooked rice, shredded chicken, and mixed vegetables.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and sesame oil until smooth.
- Pour the peanut dressing over the rice and chicken mixture, tossing to combine.
- Season with salt and pepper to taste.
- Serve garnished with chopped peanuts and cilantro.
Notes
For extra flavor, whisk the dressing well until smooth. Can be made a day ahead, just add the dressing on serving day. Leftovers can be reheated in the microwave but shouldn't be overcooked.
