Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a bowl, whisk together the flour, baking soda, cream of tartar, and salt.
- In another large bowl, cream the softened butter and 1 ½ cups sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mix, mixing until just combined.
- Spread the batter evenly in the prepared baking pan.
- In a small bowl, mix the remaining ½ cup sugar and cinnamon together.
- Sprinkle the cinnamon-sugar topping over the cookie batter.
Baking
- Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars.
Notes
These bars can be served warm with vanilla icing or ice cream. Store in an airtight container at room temperature for 3-4 days or in the fridge for up to a week. Reheat in the microwave as needed.
