Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is soft, not melted.
  • 1 ½ cups granulated sugar
  • 1 large egg Use a room temperature egg for better mixing.
  • 1 tablespoon vanilla extract
Topping
  • ½ cup granulated sugar For topping.
  • 2 tablespoons ground cinnamon For topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  3. In another large bowl, cream the softened butter and 1 ½ cups sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mix, mixing until just combined.
  6. Spread the batter evenly in the prepared baking pan.
  7. In a small bowl, mix the remaining ½ cup sugar and cinnamon together.
  8. Sprinkle the cinnamon-sugar topping over the cookie batter.
Baking
  1. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  2. Allow to cool before cutting into bars.

Notes

These bars can be served warm with vanilla icing or ice cream. Store in an airtight container at room temperature for 3-4 days or in the fridge for up to a week. Reheat in the microwave as needed.
