Preparation
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes into halves or quarters.
- Slice the smoked sausage into 1/4-inch thick rounds.
- In a bowl, mix together the ranch seasoning, garlic powder, onion powder, and black pepper.
- In a large bowl, toss the halved potatoes with olive oil and half of the ranch seasoning mixture.
- Line a baking sheet with parchment paper or grease lightly.
Cooking
- Spread the seasoned potatoes on the baking sheet in a single layer.
- Scatter the sausage slices evenly over the potatoes.
- Roast in the oven for 35-40 minutes, stirring halfway through.
- Once crispy and golden, sprinkle the shredded cheese over everything and bake for an additional 5 minutes until melted and bubbly.
Serving
- Garnish with freshly chopped parsley and serve hot with sour cream, if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. You can freeze for about 2 months but note that the texture may change upon reheating.
