Ingredients
  

Chicken Filling
  • 2 cups cooked chicken (shredded) Use leftover or rotisserie chicken for convenience.
  • 1/2 cup garlic aioli This adds creaminess and flavor.
  • 1 cup cheddar cheese (shredded) Feel free to add more cheese if desired.
  • Salt and pepper to taste Season according to personal preference.
Wraps
  • 4 large tortillas Whole wheat or corn tortillas can also be used.

Preparation
  1. In a large mixing bowl, combine the shredded chicken with garlic aioli. Mix until everything is well coated.
  2. Stir in the shredded cheddar cheese and add salt and pepper to taste.
  3. Lay a tortilla on a flat surface. Spoon a generous amount of the cheesy chicken mixture into the center.
  4. Roll up the tortilla, folding in the sides to secure the filling. Repeat with the remaining tortillas.
Cooking
  1. Heat a non-stick pan over medium heat.
  2. Place the wraps seam-side down in the pan and cook until golden brown, about 2-3 minutes per side.
Serving
  1. Slice the wraps in half and serve alongside a fresh salad or homemade fries.

Notes

For a plant-based twist, swap the chicken with grilled tofu or chickpeas, and find a creamy vegan aioli. These wraps can keep well in the fridge for 3-4 days and can be frozen for up to two months.
