Cooking
- In a skillet, cook the ground chicken over medium heat until browned.
- Add the diced bell pepper and onion, and sauté until the vegetables are tender.
- Stir in the cooked rice and shredded cheese, mixing until the cheese is melted.
- Season with salt and pepper to taste.
Assembling
- Lay out the tortillas and spoon the chicken mixture onto each.
- Roll the tortillas tightly into burritos.
Toasting
- In a skillet, heat a little oil over medium heat and toast the burritos until crispy on both sides.
- Serve warm and enjoy!
Notes
Leftovers keep well in the fridge for up to 3 days. You can freeze them for about a month. Reheat in a skillet or microwave for the best results.
