  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 4 large tortillas
  • Salt and pepper to taste

Cooking
  1. In a skillet, cook the ground chicken over medium heat until browned.
  2. Add the diced bell pepper and onion, and sauté until the vegetables are tender.
  3. Stir in the cooked rice and shredded cheese, mixing until the cheese is melted.
  4. Season with salt and pepper to taste.
Assembling
  1. Lay out the tortillas and spoon the chicken mixture onto each.
  2. Roll the tortillas tightly into burritos.
Toasting
  1. In a skillet, heat a little oil over medium heat and toast the burritos until crispy on both sides.
  2. Serve warm and enjoy!

Notes

Leftovers keep well in the fridge for up to 3 days. You can freeze them for about a month. Reheat in a skillet or microwave for the best results.
