  • 2 cups cooked rice
  • 2 cups broccoli florets
  • 1 lb chicken breasts, cubed Can use rotisserie chicken for quicker preparation.
  • 1 cup shredded cheddar cheese Stir in towards the end for best results.
  • 1 cup cream of chicken soup Can substitute with cream of mushroom or other variants.
  • 1/2 cup chicken broth Add more if reheating to prevent dryness.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. In a crockpot, combine the cubed chicken, cooked rice, broccoli, cream of chicken soup, and chicken broth.
  2. Season with garlic powder, salt, and pepper.
  3. Stir well to combine all ingredients.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  2. Stir in the shredded cheddar cheese and let it melt before serving.
  3. Serve warm and enjoy!

Notes

For extra crunch, top with crispy fried onions or fresh parsley before serving. Leftovers can be stored in the fridge for 3-4 days or frozen for 2-3 months. Reheat gently with a splash of broth if needed.
