  • 4 boneless (skinless) chicken breasts
  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional) Optional, but adds flavor.
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place chicken breasts in the dish, drizzle with 1 tbsp olive oil, and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper. Rub the seasoning evenly on both sides.
  3. Toss sliced peppers and onions with the remaining 1 tbsp olive oil and arrange around and over the chicken.
Cooking
  1. Bake uncovered for 20–25 minutes, or until chicken reaches 165°F (74°C) internally.
  2. Sprinkle mozzarella and Parmesan over chicken and peppers, then return to the oven for 3–5 minutes, or until cheese is melted and bubbly.
  3. Garnish with parsley and serve with rice, pasta, or a side salad.

Notes

To store leftovers, place in the fridge for up to 3–4 days or freeze in an airtight container for up to 3 months. Reheat in the oven until warm and bubbly.
