  • 1 lb sausage Any type of sausage (pork, chicken, or vegan)
  • 2 medium sweet potatoes, diced
  • 3 tablespoons honey
  • 3 cloves garlic, minced Toast for extra flavor
  • Salt and pepper to taste
  • 1 tablespoon olive oil For cooking

Method
 

Cooking Instructions
  1. In a large skillet, heat the olive oil over medium heat.
  2. Toss in the diced sweet potatoes and cook for about 10 minutes, stirring occasionally until they're tender.
  3. While those sweet potatoes are cooking, slice the sausage.
  4. Add the sausage to the skillet and cook for another 5-7 minutes until browned and cooked through.
  5. In a small bowl, mix together the honey, minced garlic, salt, and pepper.
  6. Pour the honey garlic sauce over the sausage and sweet potatoes, stirring to coat everything.
  7. Cook for an additional 2-3 minutes until the sauce thickens a bit.
  8. Serve warm, garnished with chopped green onions if desired.

Notes

This dish can be stored in the fridge for about 3-4 days and freezes well for up to 3 months. Reheat on the stove or in the microwave. You can also use turkey sausage or plant-based options for a lighter alternative.
