Ingredients
  

Brownie Base
  • 1 box brownie mix
  • 2 tablespoons water (for brownie mix)
Cheesecake Filling
  • 16 oz cream cheese, softened Use room temperature to avoid lumps.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Add one at a time.
  • 1/2 cup sour cream Can be swapped with Greek yogurt for a tangier flavor.
  • 1/4 teaspoon salt
  • 1/2 cup caramel sauce Drizzle on top.
  • chocolate chips (optional, for topping) Adds extra flavor and texture.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Prepare the brownie mix according to package instructions, adding 2 tablespoons of water. Pour into the prepared pan and bake for 20-25 minutes or until set. Let it cool.
Mixing Cheesecake Filling
  1. In a large bowl, beat softened cream cheese until smooth. Add sugar and vanilla, mixing well.
  2. Add eggs one at a time, mixing until just combined. Then mix in sour cream and salt.
Assembly and Baking
  1. Pour the cheesecake mixture over the cooled brownie layer.
  2. Drizzle caramel sauce on top of the cheesecake mixture.
  3. Bake for 50-60 minutes or until the center is set.
  4. Let it cool at room temperature, then chill in the refrigerator for at least 4 hours before serving. Optional: Top with chocolate chips before serving.

Notes

Serve chilled with extra caramel drizzled on top and sprinkled chocolate chips for added crunch. Store in the fridge for up to 5 days or freeze for up to 3 months.
