Ingredients
  

Pie Crust
  • 2 cups gluten-free pie crust
Filling
  • 3 cups apples, peeled and diced Firm apples like Granny Smith or Honeycrisp work best.
  • 1 cup caramel sauce Unsweetened caramel sauce can be used to reduce sugar.
  • 1/2 cup sugar Can be adjusted based on preference.
  • 1 teaspoon cinnamon Optional add-in: a pinch of nutmeg for extra flavor.
  • 1 tablespoon lemon juice Helps balance sweetness.
Egg Wash
  • 1 each egg For egg wash; can be omitted for a vegan version.
  • 1 tablespoon milk For egg wash; can be substituted with plant-based milk.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the diced apples, caramel sauce, sugar, cinnamon, and lemon juice. Mix well and set aside.
  3. Roll out the gluten-free pie crust and cut it into circles (about 4-5 inches in diameter) using a cookie cutter or a sharp knife.
  4. Place a spoonful of the apple caramel filling onto one half of each pie crust circle.
  5. Fold the other half over the filling and press the edges to seal. Use a fork to crimp the edges.
  6. In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of the hand pies with this mixture.
  7. Place the hand pies on a baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until golden brown.
  2. Allow to cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or drizzle with extra caramel for a delicious treat. Store in an airtight container for 3-5 days in the fridge, or wrap tightly and freeze for up to 3 months.
