- In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
- Add the onion, bell pepper, and garlic; sauté until softened.
- Stir in the diced tomatoes and Cajun seasoning.
- Add the pasta and enough water or broth to cover; bring to a boil.
- Reduce heat and simmer according to pasta package instructions until cooked.
- Stir in the heavy cream and cheese; cook until cheese is melted and sauce is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with parsley.
Notes
Leftovers can be stored in the fridge for 3-4 days. Reheat in the microwave or stovetop with a splash of water or broth. Can also freeze for up to 2 months.
