  • 4 pieces Roma tomatoes Chopped
  • ¼ cup basil leaves, chopped Plus more for garnish
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil Plus 1 tablespoon for the cheese mixture
  • 1-2 teaspoons balsamic vinegar
  • to taste Salt
Dairy Ingredients
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz) Softened
  • ½ cup sour cream
  • 1 tablespoon lemon juice, freshly squeezed
  • to taste Red pepper flakes For garnish
  • to taste Parmesan cheese, freshly grated For garnish

Method
 

Preparation
  1. Chop the Roma tomatoes and toss them in a bowl.
  2. Add chopped basil and minced garlic.
  3. Drizzle with olive oil and balsamic vinegar, then add salt to taste; let this mixture marinate for 10-15 minutes.
  4. In a separate bowl, blend softened cream cheese and sour cream, folding in crumbled feta, minced garlic, lemon juice, and olive oil; season with salt.
Assembly
  1. In a serving dish, layer the cheese mixture, then spoon the tomato-basil mixture on top.
  2. Garnish with additional basil, Parmesan, and red pepper flakes.

Notes

Best served with toasted baguette slices or vegetable sticks. Refrigerate in an airtight container for 3-4 days. For optimal flavor, let sit in the fridge for an hour before serving.
