  • 1 lb Chicken thighs or breasts Boneless and skinless recommended.
  • 1/2 cup Brown sugar Packed.
  • 1 cup Pineapple chunks Fresh or canned.
  • 1/4 cup Soy sauce Or coconut aminos for gluten-free.
  • 3 cloves Garlic Minced.
  • 1 teaspoon Ginger Grated or minced.
  • 2 tablespoons Olive oil For cooking.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Green onions Chopped, for garnish.

Method
 

Preparation
  1. In a bowl, mix together brown sugar, soy sauce, minced garlic, and grated ginger.
  2. In a skillet, heat olive oil over medium heat.
  3. Season chicken with salt and pepper, then add to the skillet, cooking until browned.
Cooking
  1. Pour the brown sugar mixture over the chicken and add pineapple chunks.
  2. Simmer until the chicken is fully cooked and coated in the sauce.
  3. Garnish with chopped green onions before serving.

Notes

For best flavor, consider marinating the chicken in the sauce for a few hours. Serve over rice or alongside steamed veggies. Store leftovers in an airtight container for 3-4 days, or freeze for longer storage.
