  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened Don't skimp on the butter!
  • 2 large eggs Can be substituted with chia seeds for a vegan version
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Can substitute for whole wheat or gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon Add more for an extra kick if desired

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the brown sugar, granulated sugar, and butter until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto ungreased baking sheets.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Let cool on the baking sheets for a few minutes before transferring to wire racks.

Notes

These cookies can be stored in an airtight container for about a week. If you bake a double batch, they freeze beautifully for around three months. To enjoy them like fresh, reheat in the microwave for a few seconds.
