Ingredients
  

For the dough
  • 1 cup unsalted butter Browned for extra flavor
  • 1.5 cups granulated sugar
  • 0.25 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3.25 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
For the coating
  • 1 tablespoon cinnamon
  • 2 tablespoons sugar For rolling the dough balls

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, brown the butter over medium heat until golden brown and smelling nutty. Let it cool slightly.
  3. In a mixing bowl, combine the granulated sugar, brown sugar, and the browned butter. Mix until smooth.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually mix this into the wet ingredients until well combined.
Coating and Baking
  1. In a small bowl, combine the cinnamon and sugar for coating.
  2. Scoop dough into balls and roll them in the cinnamon-sugar mixture.
  3. Place the dough balls on a baking sheet and bake for 10-12 minutes or until the edges are slightly crispy.
  4. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week or in the fridge for up to two weeks. Freeze for up to three months.
