Preparation
- In a bowl, whisk together eggs, milk, salt, and pepper.
 - Heat a non-stick skillet over medium heat and spray with cooking spray or melt butter.
 - Pour half of the egg mixture into the skillet and cook until just set.
 - Sprinkle half of the cheese and half of the meat over the eggs.
 - Place two tortillas over the filling, pressing down gently.
 - Cook until the bottom is golden brown, about 2-3 minutes, then flip to cook the other side until golden and cheese is melted.
 - Repeat with the remaining ingredients.
 - Cut into wedges and serve warm.
 
Notes
Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat in the oven or skillet for best results.
