Main Ingredients
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 cup cooked and crumbled breakfast sausage or cooked bacon
  • 4 large eggs
  • 1/4 cup milk
  • to taste Salt Adjust according to preference
  • to taste Pepper Adjust according to preference
  • Cooking spray or butter for the pan For greasing the skillet

Method
 

Preparation
  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat a non-stick skillet over medium heat and spray with cooking spray or melt butter.
  3. Pour half of the egg mixture into the skillet and cook until just set.
  4. Sprinkle half of the cheese and half of the meat over the eggs.
  5. Place two tortillas over the filling, pressing down gently.
  6. Cook until the bottom is golden brown, about 2-3 minutes, then flip to cook the other side until golden and cheese is melted.
  7. Repeat with the remaining ingredients.
  8. Cut into wedges and serve warm.

Notes

Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat in the oven or skillet for best results.
