Ingredients
  

Bacon & Sausage
  • 1.5 pounds thin-sliced bacon
  • 1 pound bulk breakfast sausage
Cheese & Dairy
  • 1.25 pounds cheddar cheese, shredded
  • 4 ounces cream cheese, chopped into chunks
  • 1/4 cup butter for eggs
  • 1/2 cup butter for hash browns 1 stick
Hash Browns & Vegetables
  • 30 ounces frozen shredded hash browns
  • 1/2 cup chopped green onions
Eggs & Spices
  • 15 large eggs
  • 1.25 teaspoons Lawry's Seasoning salt (or kosher salt)
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
Tortillas
  • 15 pieces 10-inch flour tortillas, warmed
Miscellaneous
  • 1/3 cup bacon grease or more, for cooking

Method
 

Preparation
  1. Line bacon on baking sheets and bake at 400°F until crisp.
  2. Cool and then chop bacon into bite-sized pieces.
  3. Reserve some bacon grease.
Cooking
  1. Brown the breakfast sausage in a skillet.
  2. Pack the frozen hash browns into patties and cook until crispy.
  3. Whisk the eggs with seasonings and cook with cream cheese until fluffy.
Assembly
  1. Warm the tortillas and add fillings.
  2. Fold the tortillas tightly and garnish as desired.
  3. Wrap burritos in foil for meal prep.
Reheating
  1. Reheat in microwave or bake until warmed through.

Notes

Store burritos in the fridge for up to 4 days or freeze for about 3 months. Use olive oil or butter if you don't have bacon grease.
