  • 1 cup Bell peppers Diced and roasted with potatoes
  • 1 cup Cottage cheese For a creamy texture
  • 4 large Eggs Whisked with cottage cheese
  • 1 lb Sausage Cooked until browned
  • 1 cup Cheese Shredded for layering
  • 4 large Tortillas For wrapping the burrito

Method
 

Preparation
  1. Preheat the oven and roast the potatoes and bell peppers until golden and tender.
  2. In a skillet, cook the sausage until browned.
  3. In a bowl, whisk together the eggs and cottage cheese. Pour the mixture into the skillet and scramble until fully cooked.
  4. Lay a tortilla on a flat surface and layer with the roasted potatoes, peppers, sausage, and cheese.
  5. Roll up the burrito tightly, folding in the sides as you go.
  6. Serve warm and enjoy your masterpiece!

Notes

Serve with a side of fresh salsa or sliced avocado. For crispy burritos, toast them on a skillet after rolling. Leftovers keep well in the fridge for 3-4 days or in the freezer for up to three months. Reheat in the microwave or bake at 350°F until warmed through.
