  • 4 pieces chicken thighs Juicier thighs recommended.
  • 1/2 cup Catalina dressing The star of the dish.
  • 1 cup pineapple Fresh or canned.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper For added kick.
  • 2 tablespoons oil For cooking.

Method
 

Preparation
  1. In a large skillet, heat some oil over medium heat.
  2. Add the chicken thighs and brown them on both sides until golden.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, combine the Catalina dressing and pineapple.
  5. Return the chicken to the skillet, cover it, and let it simmer for about 30 minutes or until the chicken is cooked through.
Serving
  1. Serve hot with your favorite sides, and drizzle some sauce from the pan over the chicken.

Notes

For more flavor, marinate the chicken overnight in the Catalina dressing. This dish is great for meal prep and stores well in the fridge for about 3-4 days, or can be frozen for 2-3 months.
